Ingrédients
- 300 g de riz basmati cuit
- 200 g de pois chiches cuits
- 1/2 brocolis
- 2 grosses poignées d’épinards frais
- 200 ml de lait de coco
- 60 ml de bouillon de légumes
- 200 ml de tomates pelées dans leur jus
- 1 c. à c. de concentré de tomates
- ½ oignon rouge
- 2 gousses d’ail
- 1 cm de gingembre frais
- 1 c. à s. de curry en poudre
- 1 c. à c. de paprika en poudre
- 1 c. à c. de curcuma en poudre
- Piment d’espelette selon les goûts
- ½ citron vert
- 1 poignée de coriandre fraîche
Instructions
- Commencez par faire cuire le riz selon les instructions du paquet.
- Émincez l'ail, l'oignon et le gingembre.
- Coupez le brocoli en fleurets et les tomates en morceaux.
- Dans une casserole, chauffez 1 c. à s. d'huile d'olive ou d'huile de coco et faites revenir l'oignon pendant environ 3 minutes jusqu'à ce qu'il devienne translucide.
- Ajoutez ensuite l'ail et le gingembre râpé, en remuant constamment, suivi des épices (curry, paprika, curcuma) et du concentré de tomates. Mélangez bien et ajoutez un peu d'eau si nécessaire pour éviter que cela ne colle.
- Incorporez le brocolis et les tomates, le bouillon, le lait de coco, le piment, ainsi que du sel et du poivre selon votre goût.
- Portez le mélange à ébullition, puis réduisez le feu et laissez mijoter pendant environ 15 minutes à feu doux.
- Deux minutes avant la fin de la cuisson, ajoutez les pois chiches égouttés, les épinards et le jus de citron.
- Servez le curry avec le riz, saupoudrée de coriandre hachée. C'est prêt à déguster !
