Oui, vous pouvez tout à fait utiliser des légumes surgelés si vous n’avez pas accès à des légumes frais. Assurez-vous simplement de les décongeler et de bien les égoutter avant de les incorporer à la quiche. Pour les petits pois, j’ai incorporé les petits pois congelés directement dans le fond de la quiche, avant d’y verser le liant.

Ingrédients
  

  • 1 pâte brisée
  • 4 oeufs
  • 200 ml de crème végétale ici soja
  • 1/2 brocolis
  • 1/2 botte d'asperges
  • 100 g de petits pois ici surgelés
  • 3 oignons verts
  • 100 g de feta
  • Sel / poivre noir

Instructions
 

  • Préchauffez le four à 180°C.
  • Retirez les extrémités dures des asperges et coupez les tiges en petits morceaux. Gardez les têtes des asperges de côté.
  • Coupez le brocoli en bouquets et jetez-le dans l'eau bouillante pendant 2 ou 3 minutes afin de le blanchir (optionnel). Égouttez-le bien.
  • Coupez les oignons verts finement (vous pouvez garder la partie verte pour la parsemer sur la quiche au moment de servir).
  • Dans un bol, mélangez les œufs et la crème végétale, et assaisonnez de sel et de poivre noir. Vous pouvez également y ajouter de l'ail et des herbes fraîches au choix si vous le souhaitez.
  • Étalez votre pâte à tarte dans un moule puis déposez-y les troncs d'asperges, les fleurets de brocolis, les oignons verts et les petits pois surgelés.
  • Saupoudrez la feta émiettée sur les légumes et versez le liant. Déposez-y les têtes d'asperges sur le dessus pour un joli rendu final.
  • Versez un léger filet d'huile d'olive sur la quiche et enfournez pour 35 à 40 minutes environ.
  • Laissez refroidir quelques minutes avant de déguster cette délicieuse quiche printanière.
